Vegan Basil & Tomato Soup

Even in the middle of summer, I’m always up for a delicious homemade soup. I used to buy piles of canned soup at the supermarket (yep, my past as a lazy cook is haunting me) but since I’ve learned how much thickening agent is being added to it, I just stick to the good old-fashioned rule: do it yourself! Preparing your own soup is a no brainer, doesn’t take long and never disappoint. I like to do big batches that I can freeze or use for my lunch the next day! All I have to do is get some fresh bread and prepare a quick salad to make it a meal!

Fresh and Spicy Vegan Beetroot Dip

Beetroot is one of the coolest vegetables manufactured by Mother Earth! They’re packed with minerals such as iron, manganese, copper, potassium, and magnesium but most importantly, they taste delicious, both raw and cooked! Vegan Cold Cucumber Soup with Fresh Basil

My mother used to prepare cold soups as a first course during summer and I remember loving it so much (not only because it was soooo refreshing but also because it made the whole dinner such a chic experience for the child I used to be). Improving on her original recipe, I added a few herbs and grains to spice things up a bit. The ultimate goal of the cold soup is to be revitalizing so make sure you serve it really cold (especially on a hot summer day)...
