It's mushroom season again! There is nothing comparable to a delicious plate of pasta with fresh mushrooms from the market. The other day when grocery shopping, I spotted those cute-looking shiitake mushrooms and could not resist! These vegan penne with tahini mushroom sauce is foolproof, easy and only takes half an hour to prepare.

This recipe is one of my favorite all veggie pasta dishes and adding some mint was quite surprising (in a positive way, of course!). I think that what I appreciate even more is that it’s super easy and 100% foolproof.

Cooking instant noodles reminds me of our road trip across Canada, when all we had to cook with was a portable stove and 2 sporks (a spoon and a fork at the same time). I’m not kidding!
