Eggplant Pizza are so much fin to do, have you tried it yet? I’m a huge fan of eggplants and I’m constantly searching for new recipe ideas on how to accomodate them. If you’re hosting a summer party and want to impress your guest, look no further. Eggplant pizza look like the height of refinement, yet they’re so easy to prepare! All you need to have is a nice set of cookie cutter for fun-looking veggie shapes. As you can see, I opted for a total star look 🙂
Eggplant pizza are a great appetizer but if you want to make it a meal, I would recommend cooking some rice, pasta or quinoa to go with it. Unless you want to save some room for a fancy dessert? You know your options!
Serving: 4 people
Total Time: 40 minutes
– 2 eggplants
– 1 zucchini
– 1 avocado
– 1 dry pint of cherry tomatoes
– 1 cup arugula
– 3 cloves of garlic, finely minced
– olive oil
– salt and pepper
– 1.5 cup basmati rice (optional)
Start by preheating the oven to 400°F (200°C).
Wash the eggplant and cut off the stem end in a clean slice.
Cut both eggplants lengthwise in 2cm slices.
Arrange the slices on a baking sheet.
Sprinkle with olive oil and garlic.
Season with salt and pepper.
Roast in the oven for 20 minutes.
Meanwhile, prepare the decoration.
Wash the cherry tomatoes and cut them in halves.
Cut shapes (stars, hearts, moons, spades, …) of avocado and zucchini with a cookie cutter.
Remove the eggplants out of the oven and embellish with avocado and zucchini shapes, cherry tomatoes and arugula.
Enjoy with rice, bread or pasta!
