Still looking for the perfect dessert idea to ring in the new year!? Look no further, these delicious vanilla and cranberry muffins will do the trick for any party actually.
Pure vanilla extract adds such a nice touch to any muffin recipe! It’s quite expensive but the good news is: you don’t need that much. I’m also thinking about using orange extract with dark chocolate but that will be in the next recipe. Stay tuned!
Servings : 6 muffins
Total Time: preparation time 20 minutes, cook time 15-20 minutes
– 1.5 cup all-purpose flour
– ½ cup almond flour
– 2/3 cup brown sugar
– a pinch of salt
– 2 teaspoons baking powder
– 2/3 cup almond milk
– ½ cup canola oil
– 1/2 teaspoon pure vanilla extract
– 2 eggs
– ½ cup dried cranberries
– 1 silicon muffin pan with 6 holes
Start by preheating the oven to 400°F (200°C).
Pour into a large bowl the flour, the almond flour, the sugar, the salt and the baking powder.
Add the milk, the eggs, the canola oil and vanilla extract to the mixture. Stir to combine the ingredients. Stir in the dried cranberries. Mix together.
Pour the batter into the muffin pan and cook for 15-20 minutes. Check that the muffins are baked by inserting the point of a knife into the center. Leave to cool down and remove from the pan. Savor with your favorite tea!
