Vegan Christmas Bites

I come from Alsace, France near the German border…Alsace has such a rich culture, especially when it comes to food. One of my all-time favorite traditions is baking Christmas cookies. My grandmother used to prepare up to 20 different sorts of Christmas cookies each year! My goal is to break that record one day but I’ll probably need a little bit of help!

Baking Christmas cookies can be a great team activity! Because they can take quite a lot of time to prepare (especially if you’re trying to compete with my grandmother), it’s so nice to get some help from friends and/or close relatives.

Now that I’ve changed my diet, I had to come up with vegan variations of these beloved Christmas cookies. There is no way I’m not keeping this tradition for the sake of veganism! These vegan bites were a pure delight and I’m looking forward to explore more and more vegan Christmas cookie options. Stay tuned!

– ¼ cup (240ml) almond milk

– 1 cup (200g) brown sugar

– ½ cup (125g) almond butter

– ½ cup (113g) vegan butter

– 1 cup (128g) all-purpose flour

– ¼ cup (25g) almond flour

– ½ tsp pure vanilla extract

– 2 tsp flax seeds

– 1 pinch of salt



Start by preheating the oven to 400°F (200°C).

Prepare your flax eggs as follows: in a glass, mix together the flax seeds with 6 tsp of hot water and let sit for a few minutes.

Pour the sugar, 2 butters, salt and vanilla extract in a large mixing bowl. Add the flax eggs and the almond milk. Mix well with a wooden spoon.

Stir in the almond and all-purpose flours and knead with both hands until smooth.

Place in the refrigerator for at least 3 hours. I usually prepare the dough in the evening and bake them the next morning.

Using your hands, shape the dough into balls the size of a walnut.

Place the balls on a baking sheet and cook for 20 minutes.

You can decorate the vegan Christmas bites with nuts, dried fruits or any other decoration.

These vegan bites are perfect for a snack or with your tea/coffee!
