Vegan Christmas Wreath Salad

My favorite part of the holiday season is certainly decorating the house from floor to ceiling. I get so excited when I start unboxing the Christmas decoration items from the previous years because I always forget what we all have. Tell me really, what would be Christmas without those beautiful wreaths on the doors, over the fire place or on the tables? Not that Christmassy for sure! This Christmas wreath not only is super pretty as a table decoration, but it’s edible too! It features pears but you could totally go with other fruits like oranges, mandarins, bananas for a festive touch. Plus it’s easy as a child’s play. Let’s get started!

Ingredients:

Salad:

– 142g arugula

– the seeds of one pomegranate

– 1 cup chopped walnuts

– 1 pear

 

Dressing:

– 1tbsp mustard

– 4 tbsp white wine vinegar

– 1 tbsp liquid honey

– 2 tbsp canola oil

– 2 tbsp olive oil

 

Directions:

Salad:

Take the larger round plate you have.

Arrange the arugula in a circle.

Sprinkle with pomegranate seeds and walnuts.

Wash the pear and cut it into 4 from top to bottom. Remove the seeds and stem. Slice each quarter finely so as to obtain 3 to 4 slices.

Place the pear slices on top of the wreath.

 

Dressing:

Pour the mustard into a bowl.

Stir in the white wine vinegar and mix well so as to obtain a smooth texture.

Add the honey and the two oils and mix again energetically until the dressing is homogeneous.

Ready!
