Tropical Vegan Smoothie

When fall and winter arrive, I am so so bad at eating fruits. I don’t know what it is but I don’t really fall for apples, pears and oranges. Devouring an entire basket of fresh cherries, that’s quite an easy game for me! But when it comes to peeling an orange and eating it, I just can’t. I’ve created this smoothie to help me get more vitamins during the winter months because even though I’m picky, my body really needs it!

To spice things up and add a little touch of fun to this smoothie, I’ve added cinnamon, fresh ginger, pomegranate and quinoa. The result is amazing and it’s a nice trick for all of you who struggle eating fruits during the colder months.

 

Servings: 4 people

Timing: 15 minutes

Ingredients:

– the juice of 2 organic oranges

– 2 ripe bananas

– 1 can pineapple chunks (398ml / 14oZ)

– 1-2cm fresh ginger, peeled and chopped

– 2 tbs pomegranate seeds

– 1 tbs ground cinnamon

– 1 tbs quinoa

 

Directions:

Using your food processor, mix the cinnamon, fresh ginger, the orange juice, the ripe bananas and the pineapple chunks from the can. You can decide whether you want to keep the pineapple juice of the can or not. There is usually a lot of it so I went with only half of it. It helps make the smoothie….well smoothier!

Pour the smoothie into 4 glasses or bowls and decorate with pomegranate seeds and quinoa! If you’re doing this smoothie just for yourself, make sure to pour the liquid into a glass bottle and keep it refrigerated. It might get a little bit darker but no worries, this is just the natural process of oxidation.
