Delicious comfort food for rainy days! These fluffy apple and maple syrup muffins were the perfect addition to a tea party we held in our new apartment a few days ago. So happy to be able to have friends coming over again. In our previous apartment, it was unfortunately not possible to throw parties, and the reason might surprise you slightly. We didn’t have a proper table and nor enough chairs…..Time to catch up now!
I find apples to go exceptionally well with maple syrup! I hope you will like this recipe as much as I do!
Servings : 6 muffins
Timing : preparation time 20 minutes, cooking time 15-20 minutes
– 1 ½ cup all-purpose flour (I suggest the white flour)
– ½ cup almond powder
– 2/3 cup maple sirop
– 2 teaspoons baking powder
– a pinch of salt
– 2/3 cup almond milk
– ½ cup butter
– 2 eggs
– ½ chopped apple
– 2 teaspoons grounded cinnamon
– the juice of half a lemon
– 1 handful of flaked almonds
– 1 handful of oatmeal
– 1 pouch of vanilla sugar (9g)
– 1 silicon muffin pan with 6 holes
Start by preheating the oven to 400°F (200°C).
Pour into a large bowl the flour, the almond powder and the baking powder. Stir up.
Melt the butter and let it cool down. Add the melted, cooled butter, the milk, the maple sirop and the eggs to the mixture and stir up again to combine.
Stir in the chopped apple, the cinnamon and then the flaked almonds and the oatmeal that will add a little bit of texture.
Then pour the batter into the muffin pan and cook for 15-20 minutes. Check that the muffins are baked by inserting the point of a knife into the center.
Leave to cool and remove from the pan. Savour with your favorite tea!
