I don’t have that much of a sweet tooth…but this? I could eat them all day. When I baked the raisin cookies in the oven, it released such a pleasant smell! Incredible. As far as I’m concerned, everything with cinnamon turns me on…so if you’re like me, definitely give this recipe a try (and not only for Christmas).
Serving: between 10 and 15 cookies
Total Time: 20 minutes preparation + 1 hour in the fridge + 15 minutes baking
– ½ cup butter
– ½ cup sugar
– 1 teaspoon baking soda
– 1 pack vanilla sugar (about 5g)
– 1 egg
– 2 tablespoons molasses
– ¾ white flour
– pinch of salt
– 1 teaspoon cinnamon
– 1 and ½ cups oatmeal
– ½ cup raisins
Pour hot water into a bowl and soak the raisins in it. That way, they will be soft and juicy.
Melt the butter and let cool down for a few minutes.
In a large pot, mix the butter and the sugar together until mixture becomes pale yellow.
Add the baking soda, the vanilla sugar, the salt, the cinnamon, the molasses and the egg. Mix well.
Now it’s time to add the flour and the oatmeal. Mix again.
Drain the raisins and add them to the mixture.
Leave the dough in the fridge for one hour. No cheating! Ok, ½ hour works as well J
Preheat the oven to 350°F (180°C).
Using your (clean) hands, form small balls with the dough and place them a few centimeters apart on the baking sheet. Cook in the oven for 15 minutes until very lightly browned on the sides. Enjoy these goodies!
