There is nothing wrong with eating a lot of fries, provided that they are avocado fries! Finding healthy alternatives to things I had completely banned from my diet is really exciting and I couldn’t wait any longer to share this delicious recipe with you! All it requires are super healthy ingredients. And the cherry on the cake is that you can say bye bye to oil baths because your oven is going to do the job instead. Avocado fries are quite nourishing so unless you’re planning on having an avocado fries overdose, plan 4 to 6 fries per person as an appetizer or a starter! Let’s get started lovely people!
Servings: 16 avocado fries
Total Time: 30 minutes preparation time + 15 cooking time
For the avocado fries:
– 2 firm, ripe avocados
– ½ cup breadcrumbs (I use the brand Panko)
– ¼ cup white flour
– 1 egg, slightly bitten
– olive oil
– salt & pepper
For the Chipotle Dip:
– 6 soup spoons plain yogurt
– 3 soup spoons mayonnaise
– the juice of a ½ lime
– 1 teaspoon ground coriander
– 1 teaspoon dill weed
– 1 teaspoon chipotle chili pepper
– salt & pepper
Start by preheating the oven to 400°F (200°C).
Spread 2 to 3 soup spoons of olive oil on a baking sheet.
Cut the avocados in halves, remove the pit and peel them. Cut each half in fourths so that you end up with 16 avocado stripes. Be careful though, if your stripes are too thin, they are not going to survive the coating process!
Pour the white flour, the bitten egg and the breadcrumbs in 3 different bowls.
Take the avocado stripes and dip them in the flour, then soak them in egg and finally coat them with breadcrumbs.
Place the avocado fries on a baking sheet and bake in the oven for 15 to 20 minutes.
While your avocado fries are peacefully relaxing in the oven, prepare the dip. Pour all the ingredients into a bowl and mix them together well. Adjust seasoning if necessary.
Take the avocado fries out of the oven. Let cool down for a few minutes and serve with the dip! Enjoy and let me know in the comments how this recipe worked for you and most importantly if you liked it!!!
