Looking for the easiest yet absolutely delicious muffin recipe? You’ve hit the right button! All you need on top of the basic ingredients are one lemon and poppy seeds. The marvellous lemon and poppy seeds muffins are perfect for your breakfast or for a healthy snack. Or for both 🙂
Servings : 6 muffins
Timing : preparation time 20 minutes, cooking time 15-20 minutes
– 2 cups all-purpose flour (I suggest the white flour)
– 2/3 cup brown sugar
– 2 teaspoons baking powder
– a pinch of salt
– 2/3 cup almond milk
– ½ cup butter
– 2 eggs
– the juice of half a lemon
– 3 soup spoons poppy seeds for the decoration
– 1 silicon muffin pan with 6 holes
Start by preheating the oven to 400°F (200°C).
Melt the butter and let it cool down.
Pour into a large bowl the flour, the baking powder, the salt and the sugar.
Add the melted butter, the milk and the eggs to the mixture and stir up to combine.
Pour the batter into the muffin pan and add the poppy seeds on top of the dough. Cook for 15-20 minutes. Check that the muffins are baked by inserting the point of a knife into the center. Leave to cool and remove from the pan. Savour with your favorite tea!
