Colorful Quinoa and Beetroot Salad

You’re a saladista but you’re tired of eating the same combination of vegetables over and over again? Try this tasty salad with beetroots for a change. Beetroots are wonderfully nutritious and will provide you with potassium, magnesium, iron, vitamins A, B6 and C, folic acid, carbohydrates, protein, antioxidants and soluble fibre. This vegetable is also known to help lower blood pressure, improve stamina and support bones and teeth health. Yes, that’s right, beetroot equals superfood!

Total Time: 30min

 

Ingredients:

– 3 cooked and peeled beets

– 4 cups white quinoa

– 2 handfuls walnuts

– feta cheese (200g)

– 3 celery sticks

– olive oil

– balsamic vinegar

– salt & pepper

 

Directions:

Rinse the quinoa with water. In a saucepan, bring the water to a boil, add a pinch of salt and cook the quinoa for 10 minutes. Set aside and let cool down.

Chop the cooked beets and the feta into small cubes. Wash and peel the celery sticks and chop them too. Once the quinoa is cold, mix all the ingredients in a salad bowl. Season with salt, pepper, olive oil and balsamic vinegar. So simple, right? Bon appétit!
