Tender Nut & Chocolate Chip Muffins

There is no other way to start your weekend on a positive note than with homemade muffins, believe me 🙂

Servings: 6 muffins

Total time: preparation time 20 minutes, cooking time 15-20 minutes

– 1 cup all-purpose flour (I suggest the white flour)

– 1 cup almond powder

– 2/3 cup brown sugar

– 2 teaspoons baking powder

– a pinch of salt

– 2/3 cup almond milk

– ½ cup butter

– 2 eggs

– ½ cup chopped walnuts

– 100g semi-sweet chocolate chips

– 1 silicon muffin pan with 6 holes

Start by preheating the oven to 400°F (200°C). Pour into a large bowl the flour, the almond powder, the suger and the baking powder. Stir up. Melt the butter and let it cool down. Add the cooled butter, the milk and the eggs to the mixture and stir up again to combine. Stir in the walnuts and the chocolate chips. Then pour the batter into the silicon muffin pan and cook for 15 to 20 minutes. Check that the muffins are cooked with the point of a knife. Leave to cool and remove from the pan. Savour with your favorite tea!
